Here is Canada we are just over a week away from Thanksgiving. Every year my extended family gets together and has a great big feast. We have turkey, ham, potatoes and wine. Everybody who comes brings a dessert or a side dish. There is always way too much food. This is good though, that means more leftovers for lunch the next day. I love these big holiday meals. Not only is it a great time to get together with family but it is also an opportunity to eat some food we normally do not eat.
Over the last year or so I have been introducing my family to guacamole. Most of them have never had it before and believe it or not, some had no clue what guacamole was. This year I am planning on making a recipe that includes my favourite salsa. Wholly medium salsa. I figured they all know what salsa is so it should go over well.
I was thinking this year for a side dish I would make mini meatloaves with salsa. I have made a regular size one for my family before and they loved it. I figure the ”mini” would be more festive and I can make sure each loaf has a good amount of salsa on it. Ingredients
- 4 egg whites, (or 1/2 cup/125 mL egg whites)
- 1 cup (250 mL) large-flake rolled oats
- 1 onion, grated
- 1 cup (250 mL) grated zucchini
- 3/4 cup (175 mL) grated carrot
- 4 cloves garlic, minced
- 1 tsp (5 mL) Worcestershire sauce
- 3/4 tsp (4 mL) salt
- 1/2 tsp (2 mL) dried thyme
- 1/2 tsp (2 mL) pepper
- 1-1/2 lb (680 g) extra-lean ground beef
- 1/2 cup (125 mL) salsa

PreparationIn bowl, whisk egg whites lightly; stir in oats, onion, zucchini, carrot, garlic, Worcestershire sauce, salt, thyme and pepper. Mix in beef.Place on greased rimmed baking sheet; form into 13-inch (33 cm) long by 2-inch (5 cm) high oval loaf. Bake in 350°F (180°C) oven until browned, about 40 minutes. Spread salsa over top; bake until meat thermometer registers 170°F (77°C), about 20 minutes.
