Southwest Beef Chili Recipe Perfect for Cool Fall days

This time of year is all about comfort foods. Foods to make you feel good and warm you up. One of my faves this time of year is Chili. Yum! The spicier the better for me, however the kids like it more mild. There are so  many variations of Chili, you can have a different one each day. However that may be too much! So why not have it when you are needing a little warm up and hanging around the house with plenty of time for it to simmer. 

Southwest Beef Chili Recipe 

Prep time 10 minutes

Cook time 20 minutes (the longer it simmers the better it tastes) 

Ingredients 

  • 2 carrots chopped
  • 1 medium onion chopped
  • 1 garlic clove minced
  • 1/2 teaspoon salt
  • 1lb lean ground beef
  • 1 can of red peppers
  • 2 cans of kidney beans
  • 2 tablespoons of tomato paste 
  • 1 tablespoon chili powder 
  • 3 cups beef broth 
  • 1/2 cup of kernel corn from can
  • 1/2 cup grated cheese
  • 1/4 cup flour

Cooking instructions

In a large pan on medium heat add the following; carrots, garlic and salt.

Stir and the beef. 

Brown

Add tomato paste 

Add the remainder of the ingredients (not corn)

Cook for 10 minutes

Add corn

Add in flour to thicken up sauce.

Simmer 

Add into bowls and top with shredded cheese.

Warm up with this Southwest version of a family Fall favourite.

  8. I have never had this version of chili before. Usually homemade chili here is made of meat and beans. I like the idea of extra veggies though – may have to try this recipe!
