Red Velvet Whoopie Pies for Valentine’s Day

This Valentine’s day impress your family and friends wit treats you would only find in a professional bakery. Red Velvet seems to be everywhere as far as recipes go.  Wrapped up in the little cellophane baggies are Red Velvet Whoopie pies. They look as good as they taste!

Red Velvet Whoopie Pie

Ingredients

  • 8 cups all-purpose flour
  • ½ cup cocoa powder
  • teaspoon baking soda
  • 2 teaspoon salt
  • 1lb butter, softened
  • 4 cups packed brown sugar
  • 4 egg
  • 4 teaspoon vanilla
  • 2 cups buttermilk
  • ½ cup red food colouring

Preheat oven to 350 degrees F. Line baking sheets with parchment paper and set aside.

In medium bowl combine flour, cocoa powder, baking soda, and salt, then set aside.

In mixing bowl , beat butter on medium to high speed for  30 seconds.

Then beat in brown sugar until mixture is light and fluffy. Beat in egg and vanilla. Alternately add flour mixture and buttermilk, beating after each addition just until combined. Stir in food colouring.

Pipe batter in 1- or 2-inch diameter rounds, about 1/2-inch high onto prepared baking sheets, allowing 1 inch between each round.

Bake 7 to 9 minutes for 1-inch cookies or 9 to 11 minutes for 2-inch cookies, or until tops are set. Cool completely on baking sheets on rack. Remove cooled pies from baking sheets.

To fill, dollop Whoopie Pie Filling on flat sides of half the cookies. Top with remaining cookies, flat sides down. This recipe makes 240 one-inch cookies

Whoopie Pie Filling

  • 1 cup softened butter
  • 1 lb softened cream cheese
  • 28 oz (4x7oz) marshmallow creme

In medium mixing bowl beat butter and cream cheese until smooth. Fold in marshmallow creme.

Place Whoopie pies in bags or containers to gift to loved ones. Enjoy!
