White Chocolate Cupcakes

Note- This recipe is for a bake sale or party. You can lower the ingredient portions for regular baking or bake them all and freeze 🙂 

White Chocolate Icing

3 lbs unsalted butter at room temperature

3 lbs white chocolate, melted and cooled to room temperature

6 cups icing sugar, sifted

2 Tbsp vanilla extract

1 tsp salt

White Chocolate Cupcake

2 cups unsalted butter at room temperature

4 cups sugar

12 x large eggs at room temperature

2 Tbsp vanilla extract

6 ¾ cups all-purpose flour

2 Tbsp baking powder

1 tsp salt

3 ¾ cups homo milk at room temperature

1 ½ lbs white chocolate, chopped

White Chocolate Icing

In a stand-up mixer with a whisk, beat butter until fluffy. Beat in cooled melted chocolate on medium speed. Reduce speed and beat in icing sugar, vanilla and salt (icing will be soft). Chill for about an hour to set before using.

Icing can be made ahead and chilled for up to a week, or wrapped and frozen up to a month (thaw refrigerated). Once thawed, beat to make fluffy, then use.

White Chocolate Cupcake

Preheat oven to 325 F (160 C). Line muffin pans with liners

In a stand-up mixer with a paddle, beat butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition, and stir in vanilla.

In a separate bowl, sift flour, baking powder and salt. Add flour to butter mixture in 4 additions, alternating with milk, blending well after each addition.

Melt chocolate in a bowl over lightly simmering water, stir until almost melted. Then remove from heat and continue to stir until melted. Pour warm chocolate into cake batter while blending thoroughly.

Divide and pour into prepared pan and bake until a tester inserted in the center of the cake comes out clean.

Allow cake to cool 30 minutes, then remove from pan to cool completely. Wrap cake and store frozen or at room temperature until ready to ice and decorate.
