Berry Tasty Pancakes

My whole life I have been a foodie. However, I wasn’t the typical type I have never had a thing for chocolate or Nutella, but I’ve always loved tastes that are more on the fresh side.

And what says fresh more than berries? The very thing that I love most!

Blueberries, blackberries, strawberries, raspberries you name it.

Literally any type of berry is my type of berry.

And since lately I haven’t been able to enjoy in the art of cooking that much.

See I have a one-year-old, and it is the role of a parent that takes up most of my time. I have used these little wonders in juices and shakes.

But recently I have come across a site called MyGreatRecipes and it was there that I found the perfect way to make use of my favorite fruits into another favorite of mine: Pancakes.

Among the easy and simple pancake recipes I found a lot of berry containing recipes and I decided to give them all a try.

Blueberry Pancakes

The first recipe that caught my eye were the fluffy Blueberry Buttermilk Pancakes with Blueberry Maple Syrup. Oh my God, they looked so inviting I couldn’t wait to start preparing them.

When I was finally done I devoured the whole stack and had to prepare a whole other batch for my husband. (yup when I find something tasty I just can’t get enough of it).

Luckily I had made more than enough syrup (if there is even such a thing as more than enough when it comes to syrup) and didn’t have to go to the trouble of making it all over again.

Strawberry Pancakes

I love me some strawberries. Love, love, love them. In fact, if I could pick out which berries do I like the most it would be strawberries. This is why I was thrilled to find the Roasted-Strawberry Pancakes recipe. Can you imagine the aroma the strawberries release while on the griddle? Nothing can beat that.

These pancakes are by far the best pancakes I have ever prepared, and my husband can vouch for that.

Raspberry Pancakes

And for the ultimate sweet and tangy taste you can always go for the Berry Cottage Cheese Pancakes. These pancakes are heavenly good, the cottage cheese and the raspberries make for a perfect texture that will keep you coming back for more. Definitely a must try if you ask me.

And of course I saved the best for last.

How about a muffin like pancake filled with all of the above mentioned berries?

Yup, the On the Go Pancake Cups allow for a different type of berry to be added in each of them, and they are so convenient you can make a bunch, refrigerate them and warm them up whenever you feel like eating some berry pancakes.

I don’t know about you, but by merely writing this post I got hungry, so I am off to microwave some of my yesterday’s pancakes. As for you, go ahead and prepare at least one of these recipes, you will be thanking me later.

  1. Oh I am a nutella person but raspberries?!?! I love raspberry anything and with fresh it’s great but the newer frozen ones are almost as good and make lovely loaves and muffins but I forgot pancakes – I must make those for the next “Breaky as Supper” supper.

    I do love pancakes. However, I have never made them with cottage cheese and raspberries as some of the ingredients. I intend to make them soon. Thank you for these ideas.
