Better than Carnival Caramel Corn

Popcorn is my go-to snack food. I love it on its own or with butter, chocolate, caramel etc on it. Why I never tried making my own carnival popcorn before now I have no idea! The salty sweet combination makes for a yummy snack. My family enjoys it as a snack after school and during movie time. If you are looking to make your own tasty Carnival Caramel corn at home, give this recipe a try. 

Better than Carnival Caramel Corn

Yields: 8 servings

Prep Time: 15 minutes | Cook Time: 45 minutes | Total Time: 1 hour

Ingredients:

4 quarts popcorn, popped

1 cup brown sugar, packed

½ cup corn syrup (light or dark)

½ cup butter

1 teaspoon vanilla extract

½ teaspoon salt

½ teaspoon baking soda

Cooking spray

Directions:

  1. Preheat oven to 250 degrees F.
  2. Add popped popcorn to a 9×13” glass dish (or a large shallow dish) and place in oven to warm through while preparing caramel.
  3. In a saucepan over medium heat, add brown sugar, corn syrup, butter and salt. Stir until the mixture reaches a boil.
  4. Allow the mixture to boil for 5 minutes without stirring.
  5. Remove from heat and stir in baking soda and vanilla. Mix to combine.
  6. Pour hot caramel over warm popcorn. Use a large spoon to coat the popcorn in the caramel.
  7. Place the popcorn back in the oven for 45 minutes.
  8. On a large baking sheet, place a piece of foil sprayed with cooking spray.
  9. Remove popcorn from oven after 45 minutes, and spread it onto the prepared baking sheet.
  10. Allow the popcorn to cool, and then break it apart.
  11. Store caramel corn in an airtight container for up to 2 weeks.

I know it says you can store for two weeks, but ours never lasts that long. The kids love to eat it all fresh right away.

    This is the same recipe that I use and my kids and I love it. I’ve been making for myself and then for my kids for the past 30+years. You can add peanuts (or other nuts) as well. Once it’s in the oven I take it out and give it a good stir every 15 minutes so ensure the popcorn is coated with the caramel. It’s so good and great for kids snacks.

  10. We do this once in a while as a treat. It tastes way better than store bought or even the stuff at local fair and carnivals. It is also a lot less expensive than buying it from vendors.
